Fruity Nutty Oatmeal Bowl with coconut

Breakfast is the best part of my day. It’s an opportunity for me to just chill in the morning and be present in time. This fruity nutty oatmeal breakfast bowl is a firm favourite with my children too, so I make a pretty big bowl to be shared out.

It’s brimming with the creamy richness of the rolled oats (I choose organic but any are just as good) simmered gently in unsweetened almond milk (coconut milk is also an indulgent alternative). The tartness of passion fruit really awakens the taste buds. The coconut flakes add a tropical touch too! I also like to add a sprig of fresh thyme to give it a little depth, trust me it’s good! Or Mint if you want to play it safe!

This bowl is a reminder that eating healthily can be an act of self-care that’s as luxurious as it is essential.

The Recipe

Ingredients

1 cup rolled oats

2 cups almond milk (or any other milk of choice)

1 passion fruit, halved and scooped

1 apple, julienned or thinly sliced

A handful of almonds

A handful of coconut flakes

A sprinkle of pumpkin seeds (or pepitas)

Fresh thyme or mint leaves for garnish

Method

  1. Cook the Oats: In a medium-sized saucepan, bring the almond milk to a low boil. Add the rolled oats and reduce the heat to medium-low. Cook, stirring occasionally, until the oats have absorbed most of the milk and have a creamy consistency, about 5-7 minutes. If you like your oatmeal a bit runnier, you can add a little more milk.
  2. Prepare the Toppings: While the oats are cooking, prepare your toppings. Julienne or thinly slice the apple. Cut the passion fruit in half and scoop out the seeds and pulp. Set aside.
  3. Serve: Once the oatmeal is ready, transfer it to a bowl. Arrange the apple slices, passion fruit, almonds, and coconut flakes on top of the oatmeal. Sprinkle with pumpkin seeds and garnish with fresh thyme or mint leaves.
  4. Optional: You can drizzle with a touch of honey or maple syrup for added sweetness.
